Mexican chicken stew with quinoa and pinto beans

Half quantities to serve 2:

1 tbsp olive oil
1/2 onion
Red papper
1 tbsp chipotle paste
Can chopped tomatoes
2 skinless chicken breasts
70g quinoa
chicken stock cube
1/2 can pinto beans
small bunch coriander chopped
juice 1 lime
1/2 tbsp sugar
natural yoghurt to serve
